Nutmeg isn’t truly a nut, it is the pit of a fruit that is similar to an apricot. The tree can be harvested seven to nine years after it is planted, and it is in full production after 20 years. After harvesting, the seeds are dried over a period of six to eight weeks as the nutmeg itself shrinks away from the hard outer seed coat. The shell is then broken to remove the nutmeg kernel and then crushed into a powder.
Nutmeg has an aromatic, sweet, woody flavor, with hints of clove.
The whole nutmeg has a fresher flavor and longer shelf life than ground nutmeg. It can be grated as needed for a wide variety of baking recipes. It also goes nicely with root vegetables and dark meats.
