Production

Cardamom is the fruit of a tropical plant and is one of the world’s most expensive spices, after saffron and vanilla, because the production is very long and labor intensive. The tall plants flower for eight or nine months of the year. The pods ripen slowly and are picked when they are
three-quarters ripe. After picking they are washed and dried. The seeds inside the pod are the actual spice.

Qualities

Cardamom has a strong, complex flavor with a very aromatic, resinous fragrance. It is the spice that gives chai tea its unique taste.

Common Use

Cardamom has many uses in cooking and baking as well as in teas and tinctures.
